Instructions for Our Shipwreck Shrimp Gazpacho

1. Prep the Vegetables

Dice all vegetables into ¼–½ inch pieces. Add to a large mixing bowl along with basil, seafood seasoning, and lemon juice.

2. Add The Base

Pour in cups of F&TJ’s Bloody Mary Mix and gently stir until evenly combined. 

2. Chill & Develop Flavor 

Cover and refrigerate overnight to allow flavors to fully come together.

4. Finish & Serve

Serve gazpacho well chilled and top with shrimp or serve shrimp on the side.

Shipwreck Shrimp Gazpacho

Makes 4 entree servings or 6-8 side servings

Ingredients

  • 2 garlic clove, chopped

  • 1 yellow bell pepper, diced

  • 2 red bell pepper, diced

  • 1 English cucumber, diced

  • 1 small sweet onion, diced

  • 3 yellow tomatoes, seeded and diced

  • 1/2 cup loosely packed fresh basil

  • 1 tablespoon seafood seasoning

  • 5 tablespoons fresh lemon juice

  • 4 cups F&TJ’s Bloody Mary Mix (1 bottle)

  • 1.5-2 pound large shrimp, peeled & deveined

  • 2 tablespoon olive oil

  • Salt & freshly ground black pepper

  • 2 Hass Avocados (diced and folded in)
