The Perfect Pair – F&TJ’s & NC Oysters

Fresh-shucked oysters and a bold Bloody Mary, two coastal classics that were meant to mingle. We took our mix out to Little Star Oyster Farm to put the pairing to the test, and the results? Pure North Carolina coastal magic.

Why Bloody Marys Are the Perfect Pairing for Fresh Salty N.C. Oysters

If you’ve ever sipped a perfectly spiced Bloody Mary while slurping down a fresh North Carolina oyster, you already know, this pairing is more than delicious. It’s iconic. It’s coastal. And it somehow makes every bite and sip feel like the start of summer. Whether you’re lounging on a dock or hosting brunch with friends, something just clicks when bold tomato and bright citrus meet a clean, briny oyster.

We recently brought a few bottles of F&TJ’s Bloody Mary Mix out to the folks at Little Star Oyster Farm to test the theory the best way we know how, on the water with fresh oysters pulled straight from the Pamlico’s waters. Watching the crew shuck and sip with the marsh behind them, it was clear: this isn’t just a pairing, it’s a celebration of place.

North Carolina oysters are known for their crisp, slightly sweet flavor, shaped by the nutrient-rich estuaries and winding tidal creeks that define our coast. There’s a purity in that first slurp, a taste that’s both wild and refined. And when you follow it with a cold Bloody Mary laced with real vegetables, bold spice, and bright acidity, it’s like the flavors find their echo. The tomato base and citrusy tang balance out the richness of the shellfish, while the spice plays up its natural brine. That kick your tasting is from horseradish that brings just the right edge. It cuts through the oyster’s mineral notes and makes you want to go back for more. One of the Little Star owners and farmers, John Bundy, even dusted his glass with Old Bay and said with a smile, “Now it tastes like home” (He’s from the outer banks).  Moments like that are why we do this.

Of course, no Bloody Mary is complete without its garnish game. And when you’re near the coast, the options only get better. Think pickled okra, shrimp skewers, or even a raw oyster right in the glass as a shooter. They’re not just for presentation, it’s for the experience, becuase as you know any great bloody you have ever has … has come with great garnishes. Even serving it up with a mini bottle of hot sauce or a lemon wedge perched on the shell, and you’ve got something people won’t forget.

At the end of the day, the North Carolina coast isn’t about pretense, it’s about slowing down, eating well, and soaking up the good stuff. A Bloody Mary fits right into that rhythm. Whether you’re tailgating by the water, sipping on a porch swing, or gathering with friends at an oyster roast, it’s the kind of drink that makes everything taste a little better.

At F&TJ’s Gourmet Kitchen, our mix is built for exactly this. Made with real ingredients and layered flavor, it pairs perfectly with the best oysters this state has to offer – raw, grilled, or baked. Taking it to Little Star’s Oyster Farm on the Pamlico Sound was an experience we will not soon forget.  As the farm’s owners, John Bundy & his Mother Kirsten (pictured cheersing), gave great feedback on the mix and how it complemented their Little Stars.  Next time you’re near the water, grab a dozen, mix a tall one, and raise your glass to the most iconic pairing on the coast.
